Cold Pressed White Sesame Oil

White sesame oil — nuvvula nune — is the oil Andhra pickles are traditionally finished with. Pressed cold from white sesame seed, it stays light gold with a gentle, clean sesame note rather than the strong roasted smell of toasted sesame oil.

Beyond pickles it is used for podis, festival cooking and daily tempering.
